Instruction
Dr. Liepa teaches research methodology classes at the graduate
level and general nutrition courses at the undergraduate
level.
Research
Dr. Liepa’s research interests include the study of
carbohydrates, lipids and proteins and how they impact on
chronic disease. He is also interested in the impact of sleep
on weight and health.

Dr. Rainville teaches food systems management, foods, food
and culture, careers in nutrition and dietetics, and seminar

Dr. Rainville’s research interests include school
nutrition programs, food service management, foods, and
public health. She is the Editor of The Journal of Child
Nutrition and Management.

Instruction
Dr. Brooks was a founding member of, and is currently team
leader for, the aging to infancy course. She also teaches
community nutrition, careers in nutrition and dietetics,
and numerous graduate classes through the online program.
Research
Dr. Brooks’ research interests include behavioral treatment
of weight issues, nutrition and autism across the life course,
and the life course perspective on nutrition and aging.
